Team Building 1 - Penang Heritage Walk

WE are joining a great Team Building Event yesterday.

Penang Heritage Trust conducts heritage walking tours and guests are taken on a tour by qualified guides who have been trained by PHT to conduct tours in a professional manner. The history of Penang has been made fable by too many self proclaimed guides (a few in the guise of trishaw pullers!) At the end of the day, Travellers leave Penang not knowing truth from lie... Join PHT's tour for some truth in matter....

Start from PHT Office, after introduction, walk across to Pinang Peranakan Mansion ( Baba Nyonya Museum ), tour of the Mansion. Then walk past King Street, the guide will give brief explanation on King Street temples. Then cut into Market Street , arrive at spice shops, explain various uses of spices and how to use them in cooking. Walk past saree shops, accessories, joss sticks and old mill grinding chilly and spices. Then past food stalls-explanation on different morning breakfasts offered by these stalls including Roti Canai and Teh Tarik. From Market Street , turn to Queen Street -visit Sri Mariamman Temple ( Hindu Temple ). Tour ends at Sri Mariamman Temple .

Taipei Cuisine - 一品花雕雞 First Grade China Wine Chicken

Today - we have attended to a special dinner -
一品花雕雞的負責人蔡啟漢原本打算進入大陸市場投資非餐飲業生意,在無意之中品嘗到「花雕雞」後,原本的生意沒做成,反而一頭栽進從未接觸過的餐飲業。
蔡啟漢表示,花雕雞原本是大陸廣東珠海某一間餐廳裡的一道菜,主要是將湯湯水水的火鍋,在煮第一道雞肉時,改為乾食的吃法。吃到這道菜之後覺得吃法很特別,富生意頭腦的他便開始在心中思索如何有更多有趣的變化。後來跟餐廳的老闆、老闆娘愈來愈熟之後,蔡啟漢有了引進台灣的念頭,餐廳老闆知道以後,由於彼此關係都很好,也認為蔡啟漢很有誠意,便爽快地答應:「那你就來學吧!」

於是他馬上留在當地向老闆學習,由於餐廳老闆不偷留步,把實際的技術完全教給他,於是蔡啟漢在正式進廚房學習半個月後,習得製作花雕雞的精華,也包了一個大紅包感謝老闆,而後回到台灣準備開創自己的事業。而在沒有訂定任何白紙黑字契約之下,大陸餐廳老闆基於彼此的友情,甚至在其他台灣人欲向其學習製作花雕雞時表示:「在台灣我已經教了一個人了,要學就去找他吧!」為蔡啟漢保留了市場的獨特性,也讓他至今仍非常感動。
「一品花雕雞」在2000年12月21日正式開幕,取名「一品」除了簡單好記、令人朗朗上口之外,更有「無人能取代的第一名」之涵意。這也反映在蔡啟漢對一品花雕雞的四大宗旨,除了要「吃得到」、「看得到」,還要能「聽得到」、「服務得到」。
前兩項「吃得到」和「看得到」主要著眼在花雕雞特殊的口感和新鮮的烹調方式;而「聽得到」和「服務得到」則代表了外場服務人員另類的服務方式。
從一進門到坐到座位上,服務人員會為顧客詳細地講解花雕雞的歷史、由來、做法,以及花雕酒浪漫感人的故事。這就是「聽得到」。待食材上桌之後,由服務人員在桌邊為顧客現場烹煮花雕雞,雞肉、粿條、豆腐、魚餃等,每一個階段適合煮哪一道菜,都會有專業人員為顧客服務。這就是「服務得到」。

一品花雕雞 ( 主鍋篇 ) 全份(1~3人)   全份(4~6人)        說到「皇帝雞」可是花雕雞的升級版,不僅保留花雕雞色、香、味的特色,所使用的雞肉更是特選「仿山雞」,又稱「半土雞」。皇帝雞所取用的肉僅挑選腿肉部位,而且整鍋雞吃不到一支骨頭,肉質吃起來不僅帶有嚼勁,而且彈牙不黏牙的絕佳口感,可以說是「平民化的消費,皇帝化的享受」,更是喜愛美食及挑嘴饕客的唯一選擇。
